Often referred to as a “super food”, quinoa is an excellent source of magnesium, a good source of zinc, iron, and folate, and is high in fiber. It is even a complete protein source, which is nearly unheard of in the grains group and rare even for plant foods in general! Avocados have gained popularity in recent years (avocado toast, anyone?) and for good reason! These fatty fruits are rich in monounsaturated fats (the good fats) which, when consumed in moderation and in place of saturated and trans fats, can help decrease risk for heart disease. Avocados are also packed with vitamins and minerals including folate, vitamin K, copper, B vitamins, and potassium. - It’s asparagus season! And did you know you can cook this veggie on the grill?
